Waas Bakery Limited is a long-established wholesale bakery business trading from modern, purpose-built premises in the village of Walls. Established in 1983, originally in a converted church, its success led to new purpose-built premises being constructed in 1993 where the business is now based.
The main business is the production and sale of a wide range of both freshly baked and longer shelf-life products to a range of independent retail outlets throughout Shetland, to the local Co-op supermarket in Lerwick, as well as numerous cafes, restaurants and service stations, the expanding and varied product line including ‘real’ bread (sourdough etc.), focaccia rolls, French pastries, cakes & fancies, oatcakes & biscuits.
The business was taken over by Bruce Gilardi in 2016 who immediately set about building on the previous success of the business by embarking on an ambitious programme of rebranding and the introduction of new products with the aim of creating an artisan bakery producing high quality products using the best of local ingredients where possible. Following his untimely death earlier this year, the family have reluctantly decided to pass this great opportunity on.

Deliveries are carried out using a leased Mercedes Sprinter van.
